Grilled chicken breast with herb butter – Juicy & aromatic

    🥘 INGREDIENTS:

    • 2 chicken breast fillets (approx. 180g each)
    • 2 tbsp olive oil
    • 1 tsp sweet paprika
    • ½ tsp garlic powder, ½ tsp dried thyme
    • Salt and black pepper
    • Herb butter: 80g soft butter, 1 clove garlic (finely chopped), 2 tbsp parsley, 1 tbsp chives, zest of ½ lemon, salt

    🔥 PREPARATION:

    Step 1: PREPARATION & MARINATING (35 minutes)

    • Herb butter: mix all ingredients, form into a roll and chill
    • Pat chicken dry, rub with olive oil, paprika, garlic powder, thyme, salt and pepper
    • Marinate for at least 30 minutes

    Step 2: HEAT GRILL PAN (5 minutes)

    • Heat cast iron grill pan WITHOUT oil on high heat (induction: level 8) for 4–5 minutes
    • The pan must be really hot – only then will you get real grill marks

    Step 3: GRILLING (12 minutes)

    • Place chicken breast in the pan – do not move for 5–6 minutes
    • Turn 90° for the grill pattern, another 2 minutes
    • Flip and grill for another 4–5 minutes on the other side until done
    • Check core temperature: 75°C = perfectly cooked

    Step 4: SERVE (2–3 minutes)

    • Let chicken rest for 3–4 minutes
    • Top with a slice of herb butter – it will melt on the hot meat
    • Serve with fresh herbs and a lemon slice

    ✅ TIPS FOR PERFECT RESULTS:

    • No oil in the pan – the oil goes on the meat, not in the grill pan
    • Never press chicken into the pan – its natural weight is enough for perfect grill marks
    • The BIOL cast iron grill pan creates real grill marks with its ridges, just like on an outdoor grill
    • Always use a meat thermometer – for poultry, core temperature is crucial
    • Freeze herb butter as a roll – slice as needed

    🌡️ CHICKEN DONENESS:

    • Cooked through (mandatory): 75°C core temperature – 12 min. total
    • Juicy & cooked through: 76–78°C – 13–14 min. total
    • Tip: Remove from heat at 73°C – residual heat will bring it to the final 2°C

    🍷 SERVING SUGGESTION:

    Serve with grilled zucchini or asparagus from the same grill pan, a light green salad with lemon dressing, or ratatouille. As a drink: dry rosé or chilled white wine.
