Sauerbraten with Dumplings – The Classic German Pot Roast
Sauerbraten is one of the great German braising classics – it demands time, patience, and the right cookware. A cast-iron casserole holds an even temperature for hours, letting the meat braise to perfection in its own marinade.
Ingredients
- 1 kg beef roast (shoulder or top round)
- 250 ml red wine
- 250 ml red wine vinegar
- 300 ml water
- 1 onion, roughly chopped
- 2 carrots, sliced
- 2 bay leaves, 5 juniper berries, 5 peppercorns, 3 cloves
- 1 tsp salt, 1 tsp sugar
- 3 tbsp clarified butter
- 1 tbsp tomato paste
- 2 tbsp gingerbread (Lebkuchen), crumbled (for the sauce)
- 100 ml red wine, extra
Preparation
-
Make the marinade (2 days ahead): Bring all marinade ingredients to a boil, then let cool. Place the meat in the cooled marinade, cover, and marinate in the refrigerator for 2 days, turning occasionally.

-
Prepare the meat: Remove the meat from the marinade and pat dry. Strain the marinade through a sieve, reserving the liquid. Set the vegetables aside.

-
Sear: Heat the cast-iron casserole over high heat (setting 8) with clarified butter. Sear the meat on all sides for 3–4 minutes per side until deep dark brown. Remove.

-
Braise: Sauté the marinade vegetables in the drippings for 3 minutes. Stir in the tomato paste and cook for 1 minute more. Deglaze with the marinade liquid and the extra red wine. Return the meat to the pot, cover with the lid. Braise at setting 2–3 (or 160 °C in the oven) for 2–2.5 hours.

- Sauce & finish: Remove the meat and let it rest. Strain the sauce through a sieve, thicken with the crumbled gingerbread, and season to taste. Serve with Thuringian dumplings and red cabbage.
Tips & Tricks
- Marinate for at least 2 days – the longer, the more tender and flavorful.
- Never let it boil – braising at 85–90 °C (a gentle simmer) yields tender meat.
- Gingerbread as a thickener – gives the sauce depth and sweetness while binding it at the same time.
Serving Suggestion
With Thuringian dumplings, red cabbage, and a glass of full-bodied red wine.
